With over a decade of professional kitchen experience, Jonathan Hill brings a disciplined yet expressive approach to his craft. For the past six years he has been based in Norway, where a deep appreciation for landscape and seasonality continues to shape his cooking.
He has held senior positions across a range of establishments, including three years as Head Chef of a respected small plates and wine restaurant - refining a style rooted in precision, balance, and social dining. His work has extended to large-scale catering at events such as Glastonbury Festival, where organisation, consistency, and quality must meet at scale.

SOCARRAT was created as a focused expression of that journey.

The Paellas
Marisco – Seafood Paella
Bomba rice cooked over flame with scampi, squid and mussels. Deep seafood stock.
Carne – Valencian Style
Chicken, pork rib and rabbit. Rosemary, smoked paprika, seasonal vegetables. Rustic and deeply traditional.
Arroz Negro
Squid and cuttlefish cooked in their own ink. Black rice, intense and saline. Served with alioli.
Arroz de Verduras – Vegetable Paella
Butter beans, asparagus, green beans, peppers. Slow-cooked vegetable stock. Bold, clean and full of fire.
